How to Make Puran Poli
Step 1: Prepare the dough
Mix wheat flour, salt, and oil in a bowl. Add water gradually and knead into a soft, smooth dough. Cover and let it rest for 20–30 minutes.
Step 2: Cook the chana dal
Wash the chana dal thoroughly and cook it in a pressure cooker until soft but not mushy. Drain any excess water.
Step 3: Prepare the sweet filling
Mash the cooked dal and transfer it to a pan. Add grated jaggery and cook over medium-low heat, stirring continuously until the mixture thickens. Add cardamom powder and nutmeg powder. Allow the filling to cool.
Step 4: Shape the Puran Poli
Divide the dough and sweet filling into equal-sized portions. Roll one dough portion into a small circle, place the filling in the centre, and carefully seal the edges.
Step 5: Roll it out
Dust lightly with flour and gently roll the stuffed dough into a thin, round flatbread. Take care not to let the filling come out.
Step 6: Cook until golden
Heat a tawa or flat pan. Cook the Puran Poli on both sides until golden spots appear, applying a little ghee as needed.
Step 7: Serve and enjoy
Serve the Puran Poli warm with ghee, milk, or a traditional Maharashtrian meal.
Tips for Perfect Puran Poli
Cook the chana dal until soft, but avoid making it watery.
Drain excess water well to prevent a runny filling.
Cook the jaggery and dal mixture until thick enough to shape.
Let the filling cool completely before stuffing.
Roll gently to prevent the dough from tearing.
Add ghee while cooking for a delicious aroma and flavour.
Health and Nutrition
Puran Poli provides carbohydrates and some protein from chana dal. Jaggery adds sweetness, while ghee contributes fat and flavour. Since it contains added sugar and refined energy from fats, enjoy it in moderation as part of a balanced diet.
